Mini S'More Bites

These mini morsels are big at parties and gatherings.  They are very easy to make, it just takes a little prep time to get all of the components together, that is, if you want variety.

Here is what you will need:

Mini Marshmallows
Chocolate melts - whatever flavor(s) you wish, I used dark and white chocolate
Frilly toothpicks
Graham Cracker Crumbs
Crushed Hard Candies (I used coffee nips for this demo)
Toasted Coconut
Crushed Pretzels

Prepare all of the marshmallows by taking two marshmallows and sticking them onto a toothpick.  Set aside.


Fill small individual bowls with desired coatings and place a spoon in each bowl for covering the marshmallows.

Graham Cracker Crumbs
Melt chocolates according to manufacturer directions.  I use the bag chocolate chips and thin with shortening until it has the consistency of heavy cream Hershey Coating recipe (If you use the Hershey recipe, please note that the white chocolate chips will require more shortening than the recipe calls for.)  I also melt them in the Wilton Chocolate Pot.  I have two pots, one for dark chocolate and one for white chocolate.

Take a marshmallow toothpick and holding onto the frilly part, dip the marshmallows into the chocolate covering the marshmallow only, and with your pointer finger and thumb, spin the toothpick back and forth between your fingers spinning off any excess chocolate.  Hold the chocolate covered marshmallow over the bowl of desired coating and, with a spoon, scoop up the coating and sprinkle over all sides of the marshmallows.

Place the coated marshmallow on a wax paper lined cookie sheet and repeat until all of the marshmallows are covered.  Only place a single layer of marshmallows on a cookie sheet.  When complete, place into refrigerator to set up.  After about 20 minutes, they should be set up and ready to eat.

Crushed Cookies, like Oreos or Sandies
Jimmies (Sprinkles)
Crushed Biscotti
Heath Bits
Crushed Butterfingers

Helpful Hint:  I have a Ninja Processor and it crushed candies and cookies the best I have ever seen.  I use the blender size to crush a whole box of Nilla Wafers into fine crumbs in one batch.
