Quick and Easy Cobbler



I ran across this recipe while searching for a dessert for a co-worker's birthday.  She was on Weight Watchers at the time so I was trying to stay within the guidelines of her diet.  I found this recipe on Cooks.com and decided to try it.  It fit my guidelines too, not many ingredients and easy to make.  I like these type of recipes for weeknight cooking.

Quick and Easy Cobbler

2 bags of frozen fruit (12-16 oz.) I chose frozen berry medley
1 box yellow cake mix
12 oz. (1 1/2 cups) of lemon lime soda (use diet for Weight Watchers)

Preheat oven to 350 degrees.  In a 13 x 9" baking dish, pour both bags of frozen fruits and spread evenly in the pan.  Sprinkle dry cake mix over the fruit breaking up large clumps with your fingers (do not mix).  Pour soda slowly over the entire top of the cake mix (again, do not mix).  Cover baking dish with foil and bake 20 minutes.  Uncover and bake an additional 40 minutes.

Optional:  Serve with ice cream or whipped cream (for dieters, low fat)

These are all of ingredients. I only used 1 1/2 cups of the soda, both bags of the frozen berries and a yellow cake mix.

Spread frozen fruit evenly in the pan.

Sprinkle dry cake mix evenly over the frozen fruit (do not mix)

Slowly pour the soda over the dry cake mix (do not mix).
Can't wait for it to cool.  I have a plate and whipped cream in hand and waiting impatiently.  Don't worry about the dry patches, there will be some.  Tastes great!
