Here is my version:
1 box Crispix cereal (12 oz.) or 9 cups
1 1/4 cup white vanilla chips
1/4 cup (half stick) butter
4 teaspoons finely grated lemon peel
2 Tablespoons fresh lemon juice
1/4 teaspoon lemon extract
3 cups powdered sugar
Add cereal into a large bowl (preferably with a tight sealing lid). Set aside.
In a 1.5 quart microwave safe bowl, add chips, butter, lemon peel, and lemon juice. Microwave on full power for 1 minute and whisk. Mixture should be smooth, if not, microwave for up to 30 seconds more. Add extract and whisk again to blend.
Pour over cereal and gently stir mixture with a large spoon until well coated. Add powdered sugar, seal lid over bowl and holding lid and bowl, shake until powdered sugar has coated all of the cereal. (If you don't have a large bowl with a sealing lid, you will just have to stir it gently until the cereal is coated with the sugar.)
Mixture needs to be stored in an air tight container.
|Melt together in a microwave, butter, vanilla chips, lemon zest, and lemon juice.|
|Pour melted mixture over cereal and gently stir until cereal is coated.|
|Add powdered sugar. Seal bowl and shake until the powdered sugar has coated all of the cereal.|
