Lemonade Rolls

I loved the idea of taking a yellow cake mix and making cinnamon rolls in my last blog Cake Mix Cinnamon Rolls so I decided to try a lemon cake mix (I love just about anything lemon).  I pondered on what to put in the middle as cinnamon filling on a lemon flavored roll did not sound appealing.  And then it clicked, lemonade drink mix sounded real good! 
The recipe is the same as the Cake Mix Cinnamon Roll recipe except use a lemon cake mix.  For the filling, instead of the cinnamon mixture, I smeared the rolled out dough with softened margarine and sprinkled 1/3 cup of Country Time Lemonade drink mix (regular, not sugarfree) over the dough.  Follow the remainder of the recipe until the glaze.  I used powder sugar mixed with lemon juice and added a bit of yellow food coloring and drizzled over the top of the warm rolls.

Lemonade Rolls
1 (18.5 oz.) box lemon cake mix
2 1/2 cups warm water (follow temp. on yeast pkg.)
2 pkgs. dry yeast
2 tsp. kosher salt
5 cups all purpose flour

In a medium bowl (or if there is enough room in your measuring cup) add yeast to water and stir.  Set aside.

In a stand mixer with the dough hook attachment add cake mix, salt and flour.  Start mixing on the lowest speed and add the yeast mixture and when you are finished adding the yeast mixture increase the speed of the mixer to "2".  Continue mixing at this speed until the mixture is complete combined and starts to form a ball.  Remove the bowl from the mixer along with the hook attachment.  Cover with a towel and set in a warm spot to rise for 1 hour.

Filling

1/3 c. Countrytime Lemonade Drink Mix powder (not sugarfree)
Margarine or butter, softened

After dough has risen for an hour, roll dough out on a floured surface into a rectangle about 10" x 24".  Spread softened butter or margarine over the entire dough surface and sprinkle 1/3 cup of dry lemonade drink mix (regular, not sugarfree).  Roll up into a long log, seam side down.  With a serrated knife, with a lightly sawing action cut into 1" slices and place into two greased 13" x 9" x 2" baking pans.  Cover with a towel and again, set in a warm spot to rise for about 1 hour or until doubled in size.

Preheat oven to 350 degrees.  When rolls have finished rising, place into oven and bake 20 to 25 minutes or until golden brown.

Lemon Glaze

2 cups of powder sugar
3-4 Tbsp. lemon juice
yellow food coloring

In a medium mixing bowl, add powder sugar and add 3 Tbsp. of lemon juice and stir until smooth and pourable, add more lemon juice if needed.  Add a few drops of yellow food coloring to make it look lemony and pour over warm rolls.
